What we learned about pasta making!

D’oh! – Dough Guide

There’s a lot of conflicting information out there about the best way to make pasta dough, so while we were testing out the machines we decided to put some do’s and don’ts to the test. Here’s what we found:

  • Don’t add salt to your pasta dough! We thought this seemed a relatively harmless addition to the dough mix that might add a little extra flavour, however we found that adding even a little salt to the dough made it too crumbly to work with. The best time to add salt (if you want to) is during the cooking process. Add a little salt to the water to help flavour the pasta.
  • Do add small amounts of vegetable juices to add flavour and colour to your pasta. Make sure you use them in place of liquids already in the recipes and not in addition or else your dough will become too wet.
  • Don’t add extra moisture! At times our dough seemed a little dry so we decided to try softening it by adding a small amount of water. This turned out to be a mistake. The dough was then too sticky and even when it seemed alright to handle it was getting stuck in the pasta makers which struggled to cut it properly.
  • Do keep kneading! When your dough seems too dry and you’re tempted to add a little extra moisture, try kneading the dough a little longer. We found that eventually the dough would soften and become almost silky in texture and this made the best pasta.
  • Don’t coat the dough in more flour when rolling it out if it seems too wet. If your dough is too wet and you simply coat the outside in flour then the inside remains wet and can get stuck when going through the pasta machine. This also won’t make the best pasta! Try to make sure all your ingredients are fully combined and the dough has a silky feel before rolling.
  • Do make sure your dough is covered if you’re doing more than one batch and rolling them separately. Allowing the dough to dry out before it is rolled and cut will make working with it really difficult so it’s always best to make sure it’s covered to prevent drying.

There’s nothing worse than coming to use an appliance and realising that you didn’t take the time to clean it last time.
